Paleo Blueberry Muffins

Most paleo treats use the same 5-10 ingredients in different variations. These paleo blueberry muffins took 15 minutes from start to in the-mouth using 6 ingredients!

The Mix:  (Makes about 12 muffins)
Coconut oil for greasing muffin tray
3 cups almond flour/meal
1/2 teaspoon baking soda
1/4 teaspoon Himalayan rock salt
1/2 teaspoon cardamom powder
1/2 teaspoon vanilla extract
3 eggs
3/4 cup blueberries
2 tablespoons chia seeds

The Creation:
Preheat oven to 180 degrees.
Combine all dry ingredients in one bowl and all wet ingredients in another first.
Then mix all ingredients in together to form an even mixture that will seem quite wet, however once cooked will lose enough moisture.
Bake for 10 minutes then check with fork for softness, bake further 5 minutes if needed.
